About FNL Waffles
FNL Waffles is Knoxville's home for authentic Liège waffles. Alongside our signature waffles, we specialize in Dutch stroopwafels, Danish pastries, Finno-Scandinavian pulla or bolle (traditional sweet rolls), and authentic baked goods of Britain and Ireland.
Founded in 2026 by Frederic Harris and Laura Lambert, FNL Waffles strives to bake the most flavorful foods using simple, wholesome ingredients, bringing a taste of Northern Europe to East Tennessee.
Kinship & Community
Good food has a way of bringing people together. There is a tradition in Sweden known as fika*, where people take a break, share coffee and something sweet, and enjoy the company of others. Whether you're sitting down with family or catching up with friends, we hope our baking helps bring moments of togetherness.

We are Frederic, Laura, and Nemo, the little family behind FNL Waffles. Frederic has long had a passion for baking and enjoys recreating traditional recipes while exploring new flavors. Laura takes photos, sharing the story of our little family bakery and helping connect our customers with the people behind the pastry.
