About FNL Waffles

FNL Waffles is Knoxville's Liège waffle. We also specialize in Dutch stroopwafels, Danish pastry, Finno-Scandinavian bolle/pulla, and authentic baked goods of Britain and Ireland.

We were founded in 2026 by Frederic Harris and Laura Lambert.

Meet Our Team

We are Frederic, Laura, and Nemo, the little family behind FNL Waffles. Frederic has long had a passion for baking unique creations. Laura enjoys documenting each bake, as well as the journey of forming this family business. Together, we are sharing our love for Nordic treats with our fellow Knovillians.
